converting from a freezer to foam and glass?

I see quite a few interesting boats on pacific boats website,most of which are freezer trollers. No one in my neck of the woods buys from freezers and I don't want to get into having to go an extra 10 hours to sell so I was curious if anyone here knows or has converted the holds over or has any insight on the matter.
Also what kind of dog and pony show will a guy have to go through to get a boat registered in the states?

Both of the boats I have looked at WERE built in the U.S. but are fished in Canada.

If they are US registered boats there shouldn't be any problem.
